Our story began when our founder, after a pre-diabetic diagnosis, started scrutinizing the “guilt-free” options on the market. What he found was disappointing. Many were light on flavor and texture—literally full of air—while others used sweeteners that falsely claimed to be low-glycemic index (GI). He realized there was a gap between what brands promised and what health-conscious individuals actually needed.
Driven by a desire for a genuine alternative, he dedicated over a year to intensive research. This was more than just recipe testing; it was a deep dive into the science of ice cream itself. He studied the interplay of ingredients and worked to develop a blend of sweeteners that not only have a genuinely low GI, but also provide the rich, satisfying structure that defines real ice cream.
